I'm planning to observe a vegan diet this week, and in preparation for this challenge I've spent some time brainstorming and researching some vegan-friendly recipes. As always, I needed to have a few vegan desserts on hand to satisfy my sweet tooth, and first up to bat is a chocolate cheesecake that's not only vegan but also raw and paleo-friendly.
When I first found this recipe, I was shocked to see that it contained cashews in the filling. How could you puree nuts into a creamy paste? Well, because you soak the nuts for at least 4 hours, they become waterlogged and are much softer in texture. Read More
I've decided that for five days every month this year, I want to try a new and different diet. The intention is not to lose weight, but to take a different approach at everyday life and try to expand my horizons while finding creative ways to enjoy food within a given set of limitations.
This month I did five days of paleo, and after thoroughly researching what foods were part of the diet, I made the commitment. I could have taken the easy way out and stuck to meat and vegetables for five days, but I wanted to get creative and try some true paleo foods while also living my life as normally as possible. I know it sounds a bit odd, and this is something I never would have made if I weren't going paleo for the week, but it is so heavenly that I know I'll be having cravings once it's gone. Read More
Happy Snow Day! Because I'm on a paleo diet this week, I thought a snowy day home from work would be the perfect opportunity to try some paleo pancakes.
I found a recipe that called for mashed banana and almond flour, both of which I had on hand. I noticed the batter was much darker in color than regular pancakes, and because of the absence of flour they cooked differently. They weren't the light and fluffy pancakes I'm used to, but ended up being pretty dry, dense and mealy. Oh, and they completely burnt on the griddle. The batter was still raw on the top when it was burnt on the bottom, which made the pancakes really hard to flip. Read More
